- 500g flour
- 250g sugar
- 150g unsalted butter
- 200g unpeeled almonds
- 2 eggs
- 3 egg yolks
- pinch of baking powder
- grated rind of 1 lemon

- pinch of salt

Cantucci di Prato

serves 6 

prep time: 10 mins         bake time: 30 mins            total time 40 mins

 

Add to the mixing bowl the eggs, egg yolks, sugar, lemon rind, baking powder and salt. Mix well. Add the flour and mix well. Add the butter until you get a soft dough. Add the almonds and mix well.



Wet your hands and roll the dough into logs of 3-4cm diameter. Place on the baking tray lined with baking powder and put into oven at 180 degree Celsius for 25 mins.



Cut the logs at an angle and bake for another 5 mins in the oven.
